On the day prior to service, refrigerate the shelf-stable juice packets at 41 degrees F or lower.
CCP: Hold under refrigeration (41 degrees F or lower) until ready for service.
Serve a variety of juices on line.
Portion 1 4-ounce carton of juice per serving. Each portion provides ½ cup of vegetable juice.
CCP: Hold under refrigeration (41 degrees F or lower) until ready for service. Check temperature every 30 minutes. Cover, label, and date any leftovers.
