1. | Wash the tomatoes under cool, clean, running water, then drain thoroughly. Core the tomatoes and thinly slice them (8 slices per tomato). CCP: Hold under refrigeration (41 degrees F or lower) until ready for assembly. |
2. | Portion 1/8 cup lettuce, one tomato slice, and two pickle slices into individual portion container. Cover and refrigerate until ready for service. |
