1. | Thaw the portions of guacamole in the refrigerator overnight. CCP: Cover and hold under refrigeration (41 degrees F or lower) until ready for service. |
2. | Portion ¼ cup of salsa with a #16 scoop into a 2-ounce container and cover with a lid. Refrigerate for service. CCP: Hold under refrigeration (41 degrees F or lower) until ready for service. Check temperature every 30 minutes. |
3. | Portion 1 ounce of chips (13 chips) into a boat for service. Cover the chips and hold for service. |
4. | On the serving line, place the guacamole and the salsa in the boats with chips and offer them to students. CCP: Hold under refrigeration (41 degrees F or lower) until ready for service. Check temperature every 30 minutes. |
5. | Portion chips with salsa and guacamole per serving. Each portion provides 1¼ oz. eq. whole grains, ¼ cup red/orange vegetable, and ¼ cup other vegetable.
