1. | If the instructions on the package are different, follow the instructions on the package. |
2. | Heat 1 gallon of water in a stockpot. |
3. | Whisk the gravy mix into the hot water and bring it to a boil. Continue stirring until the mixture thickens. CCP: Heat to 165 degrees F or higher for 15 seconds at the completion of the cooking process. If the manufacturer instructions on the package or case have a higher temperature, follow those recommendations. |
4. | Serve immediately or hold on serving line. |
5. | Portion the gravy with a 2-ounce ladle per serving. Gravy does not credit for any components. CCP: Hold and maintain the product at a minimum temperature of 135 degrees F or higher. Check the temperature every 30 minutes. Discard any leftovers. |
