1. | If the instructions on the package are different, follow the instructions on the package. |
2. | Bring 3 quarts of water to a rolling boil in a stockpot. |
3. | In a separate container, whisk 1 packet of gravy mix into 1 quart of cool water until it is lump-free. |
4. | Whisk the cool water/gravy mixture into the boiling water and return the mixture to a boil. |
5. | Reduce the heat and simmer for 1 minute. CCP: Heat to 165 degrees F or higher for 15 seconds at the completion of the cooking process. If the manufacturer instructions on the package or case have a higher temperature, follow those recommendations. |
6. | Serve immediately or hold on serving line. |
7. | Portion the gravy with a 2-ounce ladle per serving. Gravy does not credit for any components. CCP: Hold at 165 degrees F or higher. Discard any leftovers. |
